Veggie Stir-Fry Garlic Rice

Ingredients

  • 1/2 cup mixed vegetables (bell peppers, broccoli, carrots), chopped
  • 1/2 cup basmati rice
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tbsp vegetable oil
  • Salt, to taste

Method

  1. Wash the rice thoroughly under cold water and cook as per package instructions. Fluff and set aside.
  2. Heat vegetable oil in a pan, add minced garlic, and sauté until fragrant.
  3. Add the chopped vegetables and stir-fry on high heat until tender-crisp.
  4. Add soy sauce mix well.
  5. Toss the cooked garlic rice with the stir-fried veggies.
