Veggie Sticks with Hummus
Ingredients
- 1 carrot, cut into sticks
- 1 cucumber, cut into sticks
- Chickpeas - 1 cup dried (or use a can for convenience)
- Tahini - ¼ cup (for a creamy, nutty base)
- Garlic - 1-2 cloves (adjust to taste)
- Lemon Juice - 2-3 tablespoons (adds brightness)
- Olive Oil - 2-3 tablespoons (for smooth texture)
- Salt - to taste
- Optional: Cumin or smoked paprika for extra flavor
Method
- Soak and Cook Chickpeas: If using dried chickpeas, soak them overnight, then cook until soft. (Canned chickpeas can also be used; just rinse them well.)
- Blend Base: In a food processor, blend the tahini and lemon juice for a minute to make it fluffy.
- Add Remaining Ingredients: Add chickpeas, garlic, olive oil, and salt. Blend until smooth, adding water or olive oil gradually to reach the desired consistency.
- Serve: Drizzle with olive oil, and top with paprika or parsley.
- Serve fresh veggie sticks with a side of hummus for dipping
