Veggie Sticks with Hummus

Ingredients

  • 1 carrot, cut into sticks
  • 1 cucumber, cut into sticks
  • Chickpeas - 1 cup dried (or use a can for convenience)
  • Tahini - ¼ cup (for a creamy, nutty base)
  • Garlic - 1-2 cloves (adjust to taste)
  • Lemon Juice - 2-3 tablespoons (adds brightness)
  • Olive Oil - 2-3 tablespoons (for smooth texture)
  • Salt - to taste
  • Optional: Cumin or smoked paprika for extra flavor

Method

  1. Soak and Cook Chickpeas: If using dried chickpeas, soak them overnight, then cook until soft. (Canned chickpeas can also be used; just rinse them well.)
  2. Blend Base: In a food processor, blend the tahini and lemon juice for a minute to make it fluffy.
  3. Add Remaining Ingredients: Add chickpeas, garlic, olive oil, and salt. Blend until smooth, adding water or olive oil gradually to reach the desired consistency.
  4. Serve: Drizzle with olive oil, and top with paprika or parsley.
  5. Serve fresh veggie sticks with a side of hummus for dipping
